Kimchi Fried Rice

Kimchi Fried Rice is one of the best and easiest ways use up ripened kimchi with leftover rice.  I added bacon as I love the crunchy texture and the extra flavor to the dish with cooking the green onions, kimchi and rice in the bacon fat.

Feel free to substitute the bacon with your favorite meat or make it vegetarian. I kept it simple with adding green onions but you can also sauté some onions and garlic before adding in the kimchi.

Ingredients

  • 2-3 slices of bacon, sliced into bite sized pieces 
  • 1 green onion, sliced 
  • 1-2 cups sour kimchi, cut into bite sized pieces 
  • 2-3 cups cooked white rice
  • 2-3 Tablespoons  kimchi juice (optional) 
  • 1-2 teaspoons sesame oil
  • Optional topping: fried egg 
  • Optional garnish:  green onions  

Instructions

Cook in the bacon in a pan until crisp. Remove and set aside. Add the green onions and stir fry in the bacon fat for about 30 seconds. 

Add the kimchi and continue to cook for a few minutes.  Add the rice and optional kimchi juice and stir fry for a few minutes, stirring in some sesame oil towards the end. 

Transfer to a serving platter and top with optional fried egg and green onions
