Soft Boiled Egg

Here’s one of my favorite ways to eat rice when I just don’t feel like fussing with a lot of ingredients.  The egg is also great on toast as well. I keep it simple with just soy sauce and green onions but feel free to add your favorite seasonings or ingredients. 

Timing is important for the eggs so if making it the first time, just boil 1 egg to experiment and don’t drain out the hot water so that you can reheat the water again to try again!

Ingredients

  • 1-2 eggs ( depending on servings)
  • 4 cups of water (plus 1/2 cup cold water) 
  • Serving: Rice, soy sauce and green onions 

Instructions

Bring 4 cups of water just to boil in a pot. Remove the pan from heat and add about 1/2 cup of cold water and stir to cool the hot water.  Adding the cold water  is important as you will have hard yolks if the water is too hot when you add the eggs.

Gently drop the eggs into the pot,  cover, and  set your timer  for 17 minutes. If you cook longer than 18 minutes, it will result in hard yolks.  

Rinse with cold water until it’s cool enough to handle. 

Add some hot rice in a bowl, crack an egg on top of the rice and top with optional soy sauce or green onions or any other toppings desired.
