Easy Beef Curry

Curry is easy to make, delicious and perfect for when you don’t know what you make for dinner. This was made with beef but you can add any meat or make it vegetarian by adding more vegetables.  

I added potatoes, carrots, onion and garlic but feel free to use your favorite vegetables. For the curry, my favorite brand to use is Ottogi curry mix but you can use any curry mix or curry block and follow the directions for the curry / water ratio.

Once you have the vegetables chopped, the rest is easy. Bring water to boil and simmer for 5 mins. Add the curry and continue to simmer for about 10 mins or until vegetables are tender and the sauce has thickened.  Taste and add salt and pepper if needed and serve over rice.

Ingredients

  • 1 Tablespoon butter
  • 1 Tablespoon oil
  • 1/2-1 lb beef, pork or chicken or pork, cubed
  • 1/2-1 onion, cut into cubes
  • 1-2 potatoes, peeled and cut into cubes
  • 1 carrot, peeled and cut into cubes
  • 2 garlic cloves, minced 3 cups water
  • 1 packet Korean Curry Sauce Mix Ottogi or any curry block
  • Salt and Pepper, if needed
  • Serving: Rice

Instructions

Heat butter and oil tin a pan. Sauté onions for a couple of minutes. Add meat and sauté for a couple of minutes. Add the potatoes, carrots and garlic and continue to sauté for a few minutes.

Add water and bring to a boil. Simmer on medium heat for about 5 minutes. Add the curry powder (or curry block) and continue to simmer for about 10 minutes or until the vegetables are tender and the sauce has thickened. 

Serve over rice and enjoy!
