Grilled Chicken with Soy-Gochujang Marinade

Gochujang, a Korean fermented soybean paste with red chiles, gives this grilled chicken a kick with lots of flavor! Feel free to adjust the amount of gochujang, sugar or soy sauce based on preference.

You can cook the chicken on an indoor/ outdoor grill or frying pan.

Serve as a main dish with a side or serve as wraps. If serving as wraps, you can serve with the marinade, the Ssamjang recipe from my previous post, or your favorite condiment. 

Grilled Chicken with Soy -Gochujang Marinade

Ingredients

  • 3-4 lbs skinless, boneless chicken thighs
  • 1 Tablespoon cooking oil - if using a skillet
  • Optional garnish: sesame seeds and/or green onions

Marinade

  • ¼ cup soy sauce
  • 3-4 Tablespoons honey or brown sugar
  • 1 Tablespoon sesame oil
  • 2 Tablespoons rice wine vinegar or apple cider vinegar 1
  • -2 Tablespoons gochujang (Korean red pepper paste)
  • 3 garlic cloves, minced
  • 1-2 teaspoons ginger, minced or grated

Instructions

n a bowl, mix marinade ingredients together.  Coat the chicken with 1/2-3/4 of the marinade and set aside to marinate for 1-2 hours. 

Grill / cook chicken for 10-15 minutes (depending on size and whether boneless or bone-in) and until chicken is cooked and has reached an internal temperature of 165ºF.

(If using a skillet,  heat 1 Tablespoon of oil before cooking) 

Optional - brush with additional sauce. 

Garnish with optional sesame seeds and/or green onions before serving.
