Korean Garlic Chive Pancakes

Korean Garlic Chive Pancakes ( Buchujeon) is a popular snack or side dish served in Korea.

It’s very easy to make  with simple ingredients and served with a soy dipping sauce. 

You can also add other ingredients to the batter such as sliced onions, zucchini, red chili pepper, shrimp or minced pork. 

Cornstarch is added to provide a crispier texture but you can just add 1 cup flour.

Ingredients

For the Pancakes

  • About 3 cups of garlic chives
  • 3/4 cup flour
  • 1/4 cup cornstarch or rice flour
  • 1 teaspoon salt
  • 1 egg
  • 3/4 cup cold water
  • Olive oil or vegetable oil for cooking

For the Dipping Sauce

  • 1 Tablespoon say sauce
  • 1/2 Tablespoon water
  • 1/2 Tablespoon rice vinegar
  • 1 teaspoon brown sugar or honey
  • 1 garlic clove, minced (optional)
  • 1 teaspoon green onions (optional)
  • 1 teaspoon red chili flakes for spice (optional)

Instructions

Rinse the chives and cut into 1 1/2 - 2 inch long pieces and set aside. 

In a large bowl, whisk the flour, cornstarch, salt, egg, and 3/4 cup water together until  combined.  Add the chives and mix together. 

In a pan, heat 1 Tablespoon of oil over medium high heat. Pour 1 cup of the batter into the pan (or more depending on preferred size.) Spread the mixture evenly in the pan with a spatula. Cook until the bottom is browned.

Flip and cook the other side until golden brown. Repeat with the remaining batter. 

Meanwhile make the dipping sauce: In a small bowl, mix ingredients together. Taste and adjust seasoning to your taste.
