Korean Air Fried Chicken with Yangnyeom Sauce. 

Yangnyeom Sauce is a a popular gochujang (red pepper paste) based sauce that is sticky, sweet and spicy. It’s made with gochujang, soy sauce, garlic, vinegar, ketchup and sugar or syrup. Ginger is also added but since I marinated the chicken with ginger, I didn’t add to sauce. 

This sauce is great on any meat, tofu or vegetables.  When added to fried chicken, it’s called  Yangnyeom Chicken which is a very popular dish in Korea.  Adjust the spice level with the amount of gochujang added to the sauce.

I used the Instant Pot Air Fryer Lid to cook the chicken in 2 layers but you can also fry in oil. The chicken is first air fried for 24 minutes at 360°F, then air fried for 6 minutes at 400°F. 

Cooking the chicken in two temperatures in the air fryer results in chicken that is tender on the inside and crisp on the outside. The lower temperature allows the fat to render with the higher temperature to crisp up the skin. 

Once the chicken is air fried (or fried) it’s tossed in the sauce for a sticky, sweet, and spicy chicken that is so addictive you won’t be able to stop eating them!

Ingredients

Chicken

  • 2-3 pounds chicken wings
  • 2 Tablespoons rice wine, mirin or milk (optional- helps with tenderizing meat)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ginger, grated
  • Optional garnish: green onions, sesame seeds

Yangnyeom Sauce

  • 1/2 Tablespoon oil 
  • 2 garlic cloves, minced or grated
  • 2 Tablespoons soy sauce
  • 1 Tablespoon rice vinegar or white vinegar 
  • 1/4 cup ketchup 
  • 2-3 Tablespoons gochujang (Korean red chili pepper paste)- to taste 
  • 2-4 Tablespoons corn syrup, rice syrup or honey - to taste

Instructions

In a bowl, add the chicken, rice wine, salt, pepper, and ginger and mix until combined Optional: Set aside for about 20 minutes to marinate ( you can also marinate  in the fridge a few hours up to overnight)  

Spray or brush the air fryer basket with some oil. Place the chicken wings in the air fryer in a single layer. Cook the wings for 24 minutes at 360°F, turning over halfway.

Turn the chicken over again and increase the temperature to 400°F and cook for 6 more minutes or until the skin is golden and crispy to your preference.

Meanwhile, make the sauce: Heat the oil in a pan. Add garlic and sauté for about 10 seconds. Add in remaining ingredients and heat until bubbly. Taste and adjust seasonings, as needed and turn off the heat.

Once the chicken is cooked, add the chicken to the sauce and toss to coat. Transfer to a serving plate and garnish with optional green onions or sesame seeds.
